Ingredients
  

  • 1 cup cooked black beans
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper diced
  • 1 avocado sliced
  • ½ red onion diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 small corn tortillas
  • Fresh cilantro leaves
  • Lime wedges
  • Salt and pepper to taste

Instructions

  • ❶ Sauté the Veggies
    Heat olive oil in a large skillet over medium heat.
    Add red onion and bell pepper, and sauté for 5-7 minutes until softened.
    ❷ Add Beans and Corn
    Add black beans and corn to the skillet.
    Season with cumin, chili powder, salt, and pepper.
    Stir to combine and cook for another 5-7 minutes until everything is heated through.
    ❸ Warm the Tortillas
    Warm the tortillas in a separate pan or microwave.
    ❹ Assemble the Tacos
    Spoon the vegetable mixture onto the warm tortillas.
    Top with sliced avocado, fresh cilantro leaves, and a squeeze of lime juice.
    ❺ Serve
    Serve immediately with extra lime wedges on the side.
