Ingredients
  

  • 2 medium zucchini spiralized into noodles
  • 1 ripe avocado
  • ½ cup fresh basil leaves
  • 1 clove garlic
  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ cup cherry tomatoes halved
  • 2 tablespoons pine nuts optional

Instructions

  • ❶ Prepare the Zucchini Noodles
    Spiralize the zucchini into noodles using a spiralizer or julienne peeler.
    ❷ Make the Avocado Pesto
    In a blender or food processor, combine avocado, basil, garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth.
    ❸ Toss the Noodles
    Toss the zucchini noodles with the avocado pesto until they are well coated.
    ❹ Garnish and Serve
    Garnish with cherry tomatoes and pine nuts for extra flavor and texture. Serve immediately.
