Ingredients
  

  • 3.5 lbs Ontario lamb leg bone-in or boneless
  • 4 cloves garlic minced
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika optional for extra color
  • ½ tsp red pepper flakes optional for heat

Instructions

  • ❶ Preheat the Oven
    Set the oven to 325°F (163°C).
    ❷ Prepare the Lamb
    Pat the lamb dry with paper towels.
    Make small incisions on the surface and insert minced garlic into the slits.
    In a bowl, mix olive oil, Dijon mustard, lemon juice, rosemary, thyme, salt, pepper, and paprika.
    Rub the mixture all over the lamb leg, ensuring even coating.
    ❹ Roast the Lamb
    Place the lamb on a roasting pan with a rack.
    Roast for about 1 hour 45 minutes – 2 hours, depending on preferred doneness.
    ❺ Use a Meat Thermometer
    Medium-Rare: 130°F (54°C)
    Medium: 140°F (60°C)
    ❻ Rest the Lamb
    Remove from the oven, tent with foil, and let it rest for 15–20 minutes before slicing.
    ❼ Serve
    Slice thinly against the grain and serve with your favorite sides like roasted potatoes, grilled vegetables, or a fresh salad.
