Ingredients
  

  • 1 whole leg of lamb about 5-6 lbs
  • 4 cloves garlic sliced
  • 3 tbsp olive oil
  • 2 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 cup beef or chicken broth for basting

Instructions

  • ❶ Preheat Oven
    Set your oven to 375°F (190°C).
    ❷ Prepare the Lamb
    Pat the lamb dry with paper towels.
    Make small incisions all over and insert garlic slices.
    ❸ Make the Marinade
    In a bowl, mix olive oil, rosemary, thyme, Dijon mustard, lemon juice, salt, pepper, and paprika.
    ❹ Season the Lamb
    Rub the marinade all over the lamb, ensuring it coats evenly.
    ❺ Roasting
    Place the lamb on a roasting rack in a pan.
    Pour some broth into the pan to keep the meat moist.
    Roast for about 1 hour and 30 minutes, basting occasionally.
    ❻ Check Doneness
    Use a meat thermometer—
    130°F (54°C) for medium-rare
    140°F (60°C) for medium
    ❼ Rest the Meat
    Remove from the oven and cover with foil.
    Let it rest for 15-20 minutes before slicing.
    ❽ Serve
    Slice and serve with roasted vegetables or mashed potatoes.
