Ingredients
  

  • ½ cup unsalted butter softened
  • ½ cup vegetable shortening
  • 2 cups granulated sugar
  • 5 large eggs separated
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • For the Cream Cheese Frosting: 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup chopped pecans for garnish

Instructions

  • ❶ Preheat the Oven and Prepare Pans
    Preheat the oven to 350°F (175°C).
    Grease and flour three 9-inch cake pans.
    ❷ Prepare the Cake Batter
    Cream butter, shortening, and sugar until light and fluffy.
    Add egg yolks one at a time, beating well after each addition.
    Sift flour and baking soda, then add to the mixture alternately with buttermilk.
    Stir in vanilla, coconut, and pecans.
    Beat egg whites separately until stiff peaks form, then gently fold them into the batter.
    ❸ Bake the Cake
    Pour batter into the prepared pans.
    Bake for about 25 minutes, or until a toothpick inserted into the center comes out clean.
    Let the cakes cool completely before frosting.
    ❹ Make the Frosting
    Beat cream cheese, butter, and vanilla until smooth.
    Gradually add powdered sugar and beat until fluffy.
    ❺ Assemble the Cake
    Layer the cakes with frosting between each layer.
    Spread the remaining frosting over the top and sides.
    Garnish with chopped pecans and serve!
