Ingredients
  

  • 2 ½ cups gluten-free all-purpose flour with xanthan gum
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter softened or dairy-free alternative
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract optional

Instructions

  • ❶ Preheat the Oven & Prepare the Baking Sheet
    Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
    ❷ Mix the Dry Ingredients
    In a bowl, whisk together gluten-free flour, baking powder, and salt.
    ❸ Cream the Butter & Sugar
    In a separate bowl, cream the butter and sugar until light and fluffy.
    ❹ Add Wet Ingredients
    Add the egg, vanilla extract, and almond extract, mixing until well combined.
    ❺ Combine Wet & Dry Ingredients
    Gradually mix in the dry ingredients until a dough forms.
    ❻ Shape the Cookies
    Roll out the dough on a lightly floured surface and cut out desired cookie shapes.
    ❼ Bake the Cookies
    Place the cookies on the prepared baking sheet and bake for 8-10 minutes, or until the edges are lightly golden.
    ❽ Cool the Cookies
    Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
    ❾ Decorate (Optional)
    Decorate with icing if desired.
