Ingredients
  

  • 2 cups quinoa or rice
  • 1 cup chickpeas cooked
  • 1 cup chopped vegetables e.g., bell peppers, zucchini, spinach
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Fresh herbs for garnish optional

Instructions

  • ❶ Cook Quinoa or Rice
    Cook quinoa or rice according to package instructions.
    ❷ Heat Olive Oil
    Heat olive oil in a large pan over medium heat.
    ❸ Sauté Vegetables
    Sauté chopped vegetables until tender (about 7-10 minutes).
    ❹ Add Chickpeas
    Add cooked chickpeas to the pan and cook for another 5 minutes.
    ❺ Stir in Seasonings
    Stir in lemon juice, turmeric, salt, and pepper.
    ❻ Combine Mixture
    Combine the cooked quinoa or rice with the vegetable-chickpea mixture.
    Stir until well combined.
    ❼ Garnish and Serve
    Garnish with fresh herbs and serve warm.
