Crispy Vegan Taquitos Recipe

Crispy, flavorful vegan taquitos with seasoned beans and vegetables

Ingredients
  

  • 16 corn tortillas
  • 2 cans 15 oz each black beans, drained and rinsed
  • 1 cup diced onion
  • 3 cloves garlic minced
  • 1 cup diced bell peppers
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Cooking spray or additional oil for baking

Instructions

  • ❶ Preheat oven to 425°F (220°C).
    ❷ Heat olive oil in a large pan over medium heat.
    ❸ Sauté onions and garlic until softened.
    ❹ Add bell peppers and cook for 3-4 minutes.
    ❺ Add beans and seasonings, mash slightly.
    ❻ Warm tortillas until pliable.
    ❼ Place 2-3 tablespoons of filling in each tortilla.
    ❽ Roll tightly and place seam-side down on baking sheet.
    ❾ Brush or spray with oil.
    ❿ Bake for 15-20 minutes until crispy.
    ⓫ Serve with desired toppings and sauces.
