Ingredients
  

  • 1 boneless lamb shoulder about 3–4 lbs
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped
  • 1 tbsp fresh parsley chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon zest
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp ground cumin optional
  • ½ cup breadcrumbs optional for extra crust

Instructions

  • ❶ Preheat Oven
    Set oven to 325°F (163°C).
    ❷ Prepare the Herb Crust
    In a small bowl, mix olive oil, garlic, rosemary, thyme, parsley, Dijon mustard, lemon zest, salt, and pepper.
    ❸ Season the Lamb
    Pat the lamb dry and rub the herb mixture all over. Optionally, press breadcrumbs onto the surface for extra crust.
    ❹ Roasting
    Place the lamb in a roasting pan and roast for about 3 hours, or until tender and internal temperature reaches:
    145°F (63°C) for medium-rare
    160°F (71°C) for medium
    ❺ Rest the Meat
    Let it rest for 15–20 minutes before slicing.
    ❻ Serve
    Slice and serve with roasted vegetables or a side of your choice.
