Ingredients
  

  • For the cake: 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream or Greek yogurt
  • cups diced apples Granny Smith or Honeycrisp
  • For the streusel topping: ½ cup brown sugar
  • ¼ cup all-purpose flour
  • ½ teaspoon cinnamon
  • ¼ cup cold unsalted butter cubed
  • ½ cup chopped walnuts or pecans optional

Instructions

  • ❶ Preheat Oven & Prepare Pan
    Preheat oven to 350°F (175°C).
    Grease a 9-inch round or square baking pan.
    ❷ Prepare Streusel Topping
    In a bowl, mix brown sugar, flour, and cinnamon.
    Cut in cold butter with a fork or pastry cutter until crumbly.
    Stir in nuts (if using) and set aside.
    ❸ Make Cake Batter
    In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
    In a large bowl, beat butter and sugar until light and fluffy.
    Add eggs one at a time, beating well after each.
    Mix in vanilla. Alternately add dry ingredients and sour cream, mixing just until combined.
    Fold in diced apples.
    ❹ Assemble Cake
    Pour batter into the greased pan and spread evenly.
    Sprinkle streusel topping evenly over the batter.
    ❺ Bake
    Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
    Let cool in the pan for 10 minutes before transferring to a wire rack.
    ❻ Serve
    Enjoy warm or at room temperature with coffee or tea!
