Ingredients
  

  • 2 lamb chops about 1 inch thick
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 2 garlic cloves minced
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar optional for extra flavor
  • Lemon wedges for serving

Instructions

  • ❶ Prepare the Marinade
    In a small bowl, mix together olive oil, rosemary, thyme, garlic, salt, and pepper.
    Optionally, add balsamic vinegar for a tangy depth of flavor.
    ❷ Marinate the Lamb Chops
    Rub the marinade onto both sides of the lamb chops and let them sit for at least 5 minutes (or up to 30 minutes for a stronger flavor).
    ❸ Heat the Skillet
    Heat a skillet over medium-high heat.
    Once hot, place the lamb chops in the skillet and sear for 4-5 minutes per side, or until the desired doneness is achieved.
    ❹ Check the Temperature
    For medium-rare, the internal temperature should be about 135°F (57°C);
    for medium, aim for 145°F (63°C).
    ❺ Rest the Lamb Chops
    Let the lamb chops rest for a few minutes after cooking.
    ❻ Serve
    Serve with lemon wedges for an extra burst of freshness.
